Carrot salad was one of the salads I made for my son’s 7th birthday party.
This salad is rich in vitamins, minerals, and fiber because the main ingredient is it’s root vegetable 🥕 carrot.
It’s quick to make and it’s always nice to serve and have fresh salad.
This salad was more for the older guests than for the kids, because of it’s spiciness.
I love this salad because of it’s garlicky and spicy flavor.
I was organizing birthday parties for my boys every year, I always made sure to make food that adults can enjoy too.
But if you don’t want it spicy, make sure to add less garlic then the recipe calls for or don’t use garlic at all. You can make it a little sweet by adding balsamic glaze.
The ingredients you’ll need:
Carrots
Garlic
Chickpeas
Red bell pepper
Cilantro
Carrot 🥕 Salad 🥗 with Chickpeas
Peel and grate 10 carrots
7 large garlic cloves, minced
1 can of chickpeas
1 red bell pepper, chopped or diced
Handful of cilantro, diced
For the dressing:
4 tbsp olive oil
2 tbsp apple cider vinegar
2 tbsp red wine🍷 vinegar
¼ tsp pepper
1 tsp Himalayan salt
½ squeezed 🍋 lemon
