TASTY Chickpea Curry

by Tatianna Yougottalove

This curry dish is one of my favourite.
I love Indian food and I love curry dishes.

This is one of the dishes that I enjoy making for me and my men, we usually eat it with rice, and sometimes with home-baked bread.
It’s very easy and quick recipe to make, very rich and tasty.

If you have many onions and chickpeas and don’t know what to do with it, this is the recipe that you’ll enjoy eating.

The ingredients you’ll need:

Onions
Garlic
Cooked or canned chickpeas
Coconut milk/cream
Lemon
Tomato paste
Turmeric
Garam Masala
Curry
Salt
Pepper
Chili peppers

Fry on high – medium heat with a few tbsp of oil until browned in colour:

8-10 onions, diced (use half red and half yellow, you can use only yellow onions if wish so)
4 large garlic cloves, diced
2 -3 cups cooked Chickpeas, or caned

When ready add spices
1½ tsp turmeric
1 tsp curry
1 tbsp garam masala
½ tsp salt
¼ tsp pepper

Mix and then add
1 lemon, squeezed
1 can tomato paste
1 can coconut milk/cream

Mix again and add
3 cups water

Bring to boil and lower the heat.

Cook on low heat for about 40-60 minutes, the longer you cook the richer and thicker is the taste.

Mix occasionally so the bottom won’t burn.

Notes:
* You can add chopped chili peppers when frying onions if you want it spicy.
* You can also add diced ginger if you wish so.

For me and my partner I served it with the spicy mix , so if you are like us and like to top it with some spice, here is how I made it –

Fry on high with a few that tbsp of oil:
5 Green pepper chilies, chopped
1½-2 red onions, cut into strips
5 large garlic cloves, sliced

Fry chilies and onions, and add on top on yours and your partners bowl, so the kids can enjoy and you can enjoy it as spicy and sweet.
