Split Pea Soup

While we are spending most of our time, at home , in self quarantine with our family. It is getting incredibly important stay and eat healthy. It is also important to cook smart using limited ingredients to make tasty and instant meals. This is one of the best nutritious soup which is high in protein and you can make this with only a few ingredients. My younger son Daniel is very picky when it comes to food choices and he not only loved this recipe but even asked for another bowl of this soup! Split peas offer significant levels of protein, iron, zinc, and phosphorus.
Split peas are also low in fat.

Ingredients:
1 cup split peas – soaked overnights
2 medium sized chopped/ diced carrot, mine was 1 large
5-6 diced onions
2 cups frozen peas
2-4 grated potatoes

Spices:
1 tsp salt
¼ tsp pepper
1 tsp turmeric
1 tbsp dry chopped onions
1 tbsp nutritional yeast

Directions to cook

Add some grape seed oil in a pan. You may also use some water, as an alternative, if you want to avoid oil. Toss chopped vegetables (onions, carrots and peas) into the pan and stir it gently till it turns soft and the onion turns a bit brown in colour.
Cover the pan with a lid so that it will heat and soften quickly.

When ready add 9 cups of water into the pan, the spices, and continue to cook for 10 to 15 min until carrots are soft for easy blend.

Blend the ingredients to achieve a certain overall consistency. Now add soaked split peas and grated potatoes into the pan and mix it well.
If you like your soup thicker then you may add less water. In this recipe I have added 9 cups of water.

Boil until the split pea is soft and then it is ready to serve. It is wonderful what one can achieve with just a few ingredients which are healthy and gluten free! Stay Safe and Eat Healthy !
