My oldest son took out the ingredients for salad that he wanted, and even though I decided I’m not filming that day I still did and made it into a full recipe because I loved the idea of this combination of ingredients.
I made quinoa to go with it, and I also went into a local Mexican store and bought delicious corn tortillas.
Ingredients:
7 Tomatoes, diced
1 cup Cheese
7 🥑 avocados
1 bunch of Cilantro, diced
1 can of Black beans, mashed with a fork
7 Pickles, diced
1 cup green olives, diced
1 red onion, diced
Dressing:
1½ 🍋 lemon, squeezed
1 teaspoon Himalayan salt
¼ teaspoon pepper
2 tbsp olive oil
2 tbsp apple cider vinegar
Mix all the ingredients together well and serve with cooked grain/seed or with chips!😋
We enjoyed this salad, and were very thankful for it.
