Ingredients

  • The ingredients you'll need:
  • 2 packs silken tofu, 530g each.
  • 1 pack veggie Bologna
  • 1 onion
  • 2 small red onions
  • Spices:
  • Β½ tsp black Himalayan salt
  • Β½ tsp onion powder
  • Β½ tsp garlic powder
  • Β½ tsp paprika
  • ΒΌ tsp turmeric
  • 3 tbsp nutritional yeast
  • 4 or more tomatoes
  • 1 bunch cilantro

Instructions

Mash tofu and fry on high heat until all the water evaporates.
Add:
Oil, sliced and diced onions, sliced Bologna.
While it's frying grate tomatoes.
Spread vegan butter on top of your favorite bread and bake for about 20 minutes for crispy and rich bread to have with scrambled tofu.

When the onions have browned, add the spices and fry for another few minutes, then add tomatoes and diced cilantro.
Fry for about 5 minutes and serve on top of your crispy 🍞 bread!

Notes

Note: *The only thing that took time was waiting for the water to evaporate. Otherwise it's a fast recipe for breakfast. *You can always use canned diced tomatoes, or just dice fresh ones instead of grating. *If you don't have vegan Bologna or you don't want to use it then add cooked beans and/or frozen/canned peas.
