My youngest son, Daniel, is very picky when it comes to food choices.
He told me that he wanted some soup so we decided to make Leek soup together as per his direction.
He also decided the spices he wanted to add to it. The idea was also to make it healthy.
This Leek soup was amazing and easy to make, it was so full of vegetables and flavour.
We enjoyed it and he’s been asking me to make it again.
I call it ‘Daniels Leek Soup’! Soups taste best when it is Homemade!
The ingredients you’ll need:
Puy lentils
Firm Tofu
Carrot
Onions
Mushrooms
Leeks
Corn
Salt
Garlic powder
Onion powder
Pepper
Turmeric
Nutritional yeast
Water
Soak 1 cup puy lentils
700g firm tofu, scrambled
1 large carrot, grated
2 onions, diced
220g whole mushrooms, diced
2 leeks, diced or chopped
1 cup corn, mine was organic frozen
Fry for about 10 minutes then add the next spices:
1 tsp sea salt
½ tsp garlic powder
½ tsp onion powder
⅛ tsp pepper
1 tsp turmeric
1 tsp nutritional yeast
6 cups water
