This is a quick and easy Blueberry Chocolate Muffins Gluten Free Recipe with lemon zest that is absolutely delicious.
It is a huge hit with my kids, they ate this vegan dessert in one sitting.

What I love about this Blueberry chocolate muffin recipe is that it’s a tasty dessert without milk or eggs and it doesn’t leave you wanting anything else.

INGREDIENTS:
1 cup blueberries
1 cup chocolate chips
1 lemon
1 tsp vanilla extract
1 tsp egg replacer
½ cup sugar
½ cup milk
¼ cup oil
1 tsp Baking powder 
¼ cup Tapioca starch 
1 cup white rice flour 

In a small bowl:
1 cup blueberries, mine were frozen
1 cup chocolate chips
1 lemon
1 tsp vanilla extract
Mix and set aside

In a bigger bowl:
1 tsp Egg replacer + 2 tbsp water = mix, then add
½ cup sugar
½ cup milk
¼ cup oil
1 tsp baking powder
Mix well then add:
¼ cup tapioca starch
1 cup white rice flour 
Mix well and continue to add:
Chocolate & blueberry mix

Mix well with a spoon.

Flour muffin pan and pour the batter into it.
It gave me 10 muffins.

Preheat the oven at 350 and bake for 40 minutes.
