This is one of my boys’ favourite salad, if not THE Most Favourite.I
always make very large quantity, and it’s never last for the next day.
My men can eat this salad ALL DAY LONG!!
And I’ll confess, Richard & and I also 🤷.
Promise you’re going to love it.
If you don’t have kids with HUGE appetites, then make half the quantity in this recipe.
The ingredients you’ll need:
Vegan hot dogs (we use lightlife because it’s also GF)
Potatoes
Beets
Carrots
Red onion (optional)
Peas
Corn
Pickles
Dressing & Spices
In a large bowl:
1 pack hot dogs, diced
6 beets, peeled, boiled & diced
6 carrots, peeled, boiled & diced
6 potatoes, peeled, boiled & diced
1 cup Peas
1 cup corn
½ -1 red onion, diced
6 pickles, diced
For dressing:
1 cup Mayo
2-3 tbsp olive oil
2-3 tbsp apple cider vinegar
1 squeezed lemon
1 teaspoon Himalayan salt
¼ teaspoon pepper
Mix well and enjoy!
Sometimes I serve this salad for my boys with plain rice, even though it’s a very filling salad.But as you can see, the quantity in the video, my boys finished this whole bowl of salad in a few hours.
