Veggies & Tofu Burger

This burger reminds of a time when I was young and my mom made it with animal product, in Russian it’s called “Katletki”.

And when I turned 14 or 15 I stopped eating it and I just ate Buckwheat that was served with. Now I’m proud to say the last few years my mom stopped eating animal products too.

I was inspired from our trip to Costa Rica when Richard was cooking and we bought this interesting looking red corn meal. I was working on my posts outside when he came and brought me lunch, and when I tried his burger I was shocked at how delicious it was and reminded me of my moms.

I promise it’s an easy recipe, so lets start cooking.

2 white onions – diced, 2 red onions – diced, 1 big garlic clove -minced, 1 zucchini – grated, 175g firm tofu – scrambled

Fry it on high heat until your likening, then add spices.

1 tsp salt, 1 tsp paprika, 1\2 tsp onion powder, 1\2 tsp garlic powder, 1\4 tsp pepper

Mix and fry for 5 minutes, then add 1 can tomato paste and 1 cup water.

Fry for another 5 minutes then move to a bowl and add 2 1\2 cups red corn meal.

Mix well and now you can go back to the same frying pan, start shaping them into burgers and fry.

It was fast and clean work, no mess here 😉

You can also add 1\2 – 1 cup cooked rice and diced cilantro and\or dill to the mix.
