This one pot recipe was made by my son, Ethan, 10 years young.
He wanted to make something with vegan sausages, so we just used the vegetables we had at hand in our refrigerator.
For this dish we used our new skillet. (LOVE it)
Note:
Before starting soak 1 1\2 cups rice, set aside.
1 pack sausage, chopped
fry it on medium while you preparing the next of the vegetables.
12 baby bell peppers, whole or cut in half.
3 red onions, sliced or chopped
1 head broccoli
1 head broccoli florets
10 garlic cloves
Fry until your liking, add:
Spices:
1 tsp salt
1\4 tsp pepper
1 tsp paprika
1 tsp onion powder
1 tsp garlic powder
1 tbsp nutritional yeast
1 cube vegetable bullion
Mix, and fry for a few minutes, add:
1 can diced tomatoes
Mix & fry for another a few minutes, then remove it into a bowl and add the rice.
Sprinkle salt & pepper, add 2 1\2 cups water mix then add the fried vegetables with the sausages on top.
Even the top, cover with lid, let it boil for 10 minutes then lower the heat and let it cook for 20-30 minutes.
Every 10 minute rotate the pan (if it’s big).
When ready add on top diced cilantro, and wait 10 minutes while it’s covered with lid.
