After 5 weeks in Costa Rica we needed to fill our refrigerator. When my friend Kat came over I decided to make mushrooms pancakes.
The texture came out really good, so the next time I made it again I just added more spices and wrote down the ingredients to post it here for you guys.
4 onions, cut thinly
4 garlic cloves, chopped or diced
4 king oyster mushrooms, cut
350g medium firm tofu, crumbled
fry everything for 10 to 15 minutes then add spices and fry for another few minutes.
2 tsp salt
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
pour into a bowl then add
1 small bunch chopped cilantro
1 cup white rice flour
1 cup amaranth flour
2 cups water
mix well everything and fry into small pancakes.
lettuce, cut thinly
cucumbers, cut thinly into half circle
tomatoes, cut thinly into half circle
red bell peppers, cut thinly into half circle
pickles, cut thinly into circles
black olives, chopped
green olives, chopped
layer everything by list, from top to bottom.
2\3 cups olive oil
2 tbsp red wine vinegar
2 to 3 tbsp balsamic vinegar
4 tbsp nutritional yeast
1 tsp Himalayan salt
1\4 tsp pepper
mix with a spoon
