This is the second time Richard baked something and it was a great success.
I love these cookies.
It is crunchy and not overly sweet, we enjoyed it tremendously.

Instructions
In a bowl:
½ cup aquafaba water
whisk until it's fluffy then add:
2-3 tbsp can't sugar
½ - 1 tsp vanilla extract
½ tsp baking powder
1 tbsp vegan butter
And continue to whisk until well combined.
Add into the mix:
Handful raisins
½ cup shredded coconut
Handful vegan chocolate chips
Handful chopped walnuts or a little more
Handful chopped peanuts or a little more
1 grated apple
Mix well with a spoon.
Add:
1 tbsp tapioca starch
1 cup all purpose flour
Mix again until all well combined.
Scoop with a spoon and place on baking pan.
Preheat at 350F.
Bake for about 15-20 minutes.
