I wasn’t sure what kind of salad I’d be making this time .For the ideas my boys and I had, we were missing some ingredients, but we didn’t want to go to the store.After my boys’ swimming lessons, in the car I remembered I have corn, my favorite vegetable, so I decided to make corn salad with the vegetables I had at hand.Wow guys, this salad and the dressing is so tasty, you’ll want to eat the whole thing.
In a bowl:
2 cups Corn
1 cup Peas
¼ small yellow Cabbage, slice very thin
¼ small yellow Cabbage, slice very thin
¼ cup Green onions, diced
4 organic carrots, sliced into circles
Dressing, in a blender:
1 cup Corn
¼ cup Nutritional yeast
½ tsp Himalayan Salt
Pinch of Pepper
1 tsp Paprika
2 tbsp red wine vinegar
2 tbsp sesame oil
2 tbsp tahini
Pour on top of your salad, mix well & enjoy this juicy, delicious salad!
