The best matzo ball soup

Welcome to another recipe for Passover. Matzo Ball Soup has always been the centre of Passover and very symbolic food to the Jewish celebration. I am liking this journey of trying out these old recipes that have been there for centuries.

One certainly cannot beat the taste and it is so easy to make this soup. During this Passover series I also realized every family makes their own version of Matzo Ball Soup and few small changes can really make a big difference. Here is my Vegan Recipe version of this Tasty Soup.

Ingredients for the Matzo Ball.
1½ cups Matzah flour
4 tsp tapioca flour
½ tsp baking powder
1 tsp squeezed lemon
½ tsp garlic powder
½ tsp onion powder
2 tsp nutritional yeast
¼ tsp salt
Pinch of pepper
2 tbsp oil
1¼ cups +2 tbsp of hot water

Direction:
Blend Matzah in a blender to make it into flour. Now transfer it to a bowl and add the dry ingredients and mix well to achieve a consistency and without any lumps.

Add some oil and hot water and mix it with a spoon. Make a dough as shown in the video.

Take a small piece of a dough and press until it holds together well, then shape with your fingers tip. Do exactly as you see in the video, so it won’t crumble when cooking it and Let it sit for 10 to 15 minutes.

Boil the water in a pot and then gently place it into a boiling water.

Cook for 10 to 15 minutes.

It will come out as bready -bite texture. Your Matzo Ball is ready !

Ingredients for the soup:
2 Carrots / 2 cups cut into rings
3 Potatoes/3 cups, chopped
1 cup chopped celery
3 small onions, chopped
1 cup chopped green long beans
1 tsp Turmeric
1 tsp Curry
1 tsp dill
½ tsp Cumin
¾ to 1 tsp Salt
Pinch of pepper
7 to 8 cups

Directions:
Add all the vegetables into a pot, add oil as an option.
Add all the spices, mix and then add water.
Allow the water to boil and cook until the carrot is soft to your liking.
