Latkes are mainly made from potatoes. They are shallow-fried pancakes of grated or ground potato.
They originated in the eastern European countries of Germany, Austria, Russia and Poland as a peasant food as Potatoes were affordable and easy to store.
These Latkes are also Gluten free.
To make this wonderful Latkes all you need :
3 large potatoes, grated and squeezed
1 small onion, chop into quarters and then cut thin
4 whole Champignon mushrooms, chop into halves and then cut thin
½ tsp salt
Pinch of pepper
1 tbsp ground flaxseed
¼ tsp onion powder
¼ tsp garlic powder
½ cup brown rice flour
Mix well and then add
½ cup water
Mix and let it sit for 10 minutes to get thicker.
Fry on medium heat on both sides.

Could they be baked?
Hi, yes.
I prefer baked because it’s more healthier but I did it for the video because of know they live it crunchy and fried.
Just add a few tbsp of oil into the mixture if you like.
