Vegetables
1 onion, diced
2 large potatoes, chopped
4 carrots, chopped
1 cup chickpeas
2 cups sliced cauliflower
Fry the vegetable with the lid closed for 10-15 minutes then add:
1 tsp salt
ΒΌ tsp pepper
Β½ tsp paprika
1 tbsp dill
1 cup diced tomatoes
5-6 cups water
Cover with lid and bring to a boil
Meatless balls
1 pack of ground soy 340g, I used Beyond Beef
1 onion, diced
4 tbsp tapioca starch
1 tbsp parsley
ΒΌ tsp salt
Pinch of pepper
Roll it out with 1 tbsp measurement into small balls.
Place on a floured surface, I used tapioca starch.
When ready flour again on top.
Or even you can roll each in the flour so it won’t stick.
When the soup is boiling add your meatless balls, lower the heat and continue to cook with the lid closed for 20 minutes or so, until meatless balls are firm.
