Almond Butter Cookie – Gluten Free

We love cookies and I wanted to make something special. So, I decided to make Almond Butter Cookie. We couldn’t stop eating it and kids actually fought for more ! lol
It was so good I had to hide a few cookies for myself, because I’m the only one who can take her time to eat desserts and enjoy the taste.

The ingredients you’ll need:
Vegan Butter
Baking powder
Cane sugar
Vanilla extract
Brown rice flour
Oat flour
Almond flour
Strawberries
Tapioca starch
Vegan chocolate chips
Vegan milk

1 cup almond flour
1¼ cups brown rice flour
1¼ cups oat flour

1 cup butter
1 tsp vanilla extract
½ tsp baking powder
⅔ cup cane sugar

Add all the ingredients into one bowl and mix well until sticky and holds it shape.

You can make cookies from a few sizes of heart shape cookie cutter, but one can be enough, I have 3, so I used them all.

Cover your tray with parchment paper and fill up you heart shape cookie cutter with dough and press with a spoon.
When ready bake at 350F for about 10 to 15 minutes, depends if you want it crunchy or a little soft, just make sure not to burn it.

You can decorate it as you like, with icing, with chocolate drizzle, or with strawberry drizzle.

Chocolate drizzle:
¼ cup vegan chocolate chips
2 tbsp vegan milk
Heat it up until thickened
And decorate as you want.

Strawberry decor:
½ cup strawberries
1 tsp tapioca starch
Blend and heat it up until thickened
Decorate as you wish. 💓

By butter, you obviously mean vegan butter correct?
