2 different dishes with the same ingredients! – Casserole & Fried Egg Rice Recipes!

I wanted to try and see how firm tofu will work out as tofu egg in a casserole. And when I noticed that the texture was amazing, I also wanted to try and see if it can hold its shape as a pancake. No, it didn’t work out, but it was tasty and had an amazing texture when fried. My boys loved it, and they shared it with their friends, who enjoyed it as well. So in this recipe you have 2 options or you can even make both, because the quantity is large, for the whole family, so you can split the mix in half, make casserole & fried mix. Most of it I baked, and a small portion l fried.

The ingredients you’ll need:
Rice
Firm tofu
Long peas
Peas
Onion
Zucchini
Spices

Add into a big bowl:
1 cup peas
2 zucchinis, diced
1 large onion, diced
2 cups diced long peas

Boil water in a pot and add:
2 cups rice, washed and strained
1 teaspoon of salt
Cook for about 10-15 minutes, don’t overcook it.
Strain when ready & add into a big bowl.

Tofu egg – In a blender:
700g medium firm tofu
1 teaspoon black Himalayan salt
¼ teaspoon pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1½ teaspoon turmeric
½ cup nutritional yeast
⅓ cup oil
⅔ water
Blend well and pour on top of the vegetables & rice.

Mix very well and now it’s up to you to make 2 dishes or only one.
Baked, fried or both.
Both are amazing and you won’t be disappointed.
