Kutabi / Chebureki – Azerbaijani Savoury Pancakes Filled With Greens & Herbs

My mom used to make it when I was young, before marrying a Canadian, and moving to a different country, far away from her.
She sent me a picture of this dish a few months ago, and I really wanted to make it and of course to veganize it.
I asked her what ingredients she used for this dish, so here it is.
So worth it, and it’s not hard at all.

My boys couldn’t even wait for it to cool down 😅.

The Ingredients you’ll need:
All purpose flour
Oil
Salt
Pepper
Dill
Cilantro/parsley
Green onions
Onion

I recommend starting with frying, so while making the dough, the greens are cooling down.

Fry until browned:
1 large onion, diced
When it’s ready, add:
1 bunch dill, diced
1 bunch cilantro/ parsley, diced
1 bunch green onions, diced
1 tsp Salt
¼ tsp Pepper
Mix well, and turn the oven off, don’t overcook the greens, just a minute or so.
Or when the onion is ready, turn it off, add your greens & spices, mix well, and let it cool down.

Dough
In a bowl:
4 cups all purpose flour
1 tsp salt
Mix and then add:
2 tbsp oil
1⅓ cup water

Mix and knead
You ca play around with the sizes you want it to be, I made some  into big & some into small sizes.
So it’s really up to you, I made around 8 pieces.

Flour or oil your surface of work and roll out each dough, spread green on half part of the dough, and with the other half close very well & tight so it won’t open while frying.

Fry on each side until browned, you can cover with lid if you want it soft, I did with open lid and mine turned out to crispy and yummy.
