How to Make Tasty Carrot Bread – Easter Vegan Recipes

Hello friends. On the Eve of Easter – I thought of sharing a perfect recipe which you can enjoy with your family – Carrot Bread!

I enjoy baking bread, but for me and my family it’s a treat!

When I bake bread, I usually try out new recipes or find ways to experiment with ingredients. It also serves the purpose of adding something new to my E-Book which I am currently working on.

I wasn’t too sure what I should make for this Easter. My head was spinning with ideas while I was trying to get some sleep in the night. But then I thought, at times, keeping it Easy is the best thing to do when in doubt. So, I thought Bread is the perfect recipe to start off the day with since Easter is all about Eggs, Bunnies and Carrots!!

So Why Not Bake a Carrot Bread, instead! Hope you will ENJOY this recipe.

4 large carrots
½ cup oil
2 tsp sugar
4 tbsp water
1 tsp yeast
4 cups all-purpose flour
1 tsp salt

Peel, chop and boil carrots in a pot. After it is boiled allow it to cool down ( just a little) for some time (since it needs to be warm to activate the yeast), place it into a blender. Now add oil, sugar and water to it. Blend well so there are no left chunks of carrots. Now you can add yeast on top, mix and let it activate for a few minutes.

In the food processor with the dough blade add blended carrot and start with ½ cup of flour and salt, blend and gradually add more flour. You want the texture to be left a little sticky.

Since I used large carrots I added 4 cups of all-purpose flour, depending on the size and quantity of carrots it can be less. As you can see in the video, Even though mine was very sticky I could add even more and still I would have been successful with the bread, so don’t worry if it’s sticky and gooey that you can’t play with it with your hands.

*The quantity of the flour will be determined by the quantity/ size of your carrots. This is the reason to take ½ cup at the time.

*Guess what, I am making the bread for the first time in a food processor. I always make my bread with my hand, so don’t worry if you don’t have the food processor.

*Add carrot blend in a big bowl, with every ½ cup of flour mix with a wooden spoon the mixture and continue until you’ll get the right texture.
