Valentine Salad 💞

When I made this salad for the first time, I was happy the combination of the ingredients went very well together.
I was inspired by a Russian video of this salad, so I veganized it and drew the heart for Valentines Day.


Richard loved this salad and every few bites he’d say how delicious it is and how he can eat it all.
When he complements my food I know he’s being very honest and not just because he loves me or my food, but because if something is missing in taste or not so tasty he’s always been honest.

I hope you enjoy this salad with your love ones.
As you can see in the video it’s really easy to make and you can decorate it as you wish.
Another option to garnish it with is fresh and diced dill.

The ingredients you’ll need:
Potatoes
beets
Apple
Onion
Pickle
Lemon
Vegan mayo
Oil
Salt
Pepper
Apple cider vinegar

Peel and boil
9 medium potatoes
2 beets
Pierce with a knife to see if it’s ready, and make sure not to over cook it so it won’t come out too soft and mushy.
While it’s cooling down prepare the rest of the ingredients.

When ready dice the next ingredients:
9 potatoes
1 apple
1 onion
1 pickle
Add into the diced vegetables
½ squeezed lemon
5 tbsp vegan mayo
1 tbsp apple cider vinegar
2 tbsp olive oil
½ tsp Himalayan salt
⅛ of pepper
Mix well and flatten on your flat dish, it doesn’t have to be a circle.

This was my first time I made it.

Shape a heart with the edge of a spoon and give space in between.
I shaped with the edge of a chop stick.

In a separate bowl dice:
2 beets then add
1 tsp olive oil
½ tsp cane sugar
Mix and then decorate as you like.
