The Best Date 🍰 Cake (Gluten Free)

Take your partner on a date in your kitchen and bake together this remarkable The best date cake 😉.

It was my first try with this cake, I just went with my feeling.
I didn’t even try it out before serving it at the table when we were having guests 🤦 , but hey it was a huge success.
I was so happy when I tried it, I didn’t fail 🙌.
And no one could stop eating it, LoL.
I needed to go and hide the last small piece as always, LoL 😂

The ingredients you’ll need:
Dates
White rice flour
Amaranth flour
Potato starch
Tapioca starch
Brown rice flour
Oil
Vanilla extract
Apple cider vinegar
Baking powder
Chia seeds
For decoration: Pecans or Walnuts

NOTE: The first time I made it, the dough came out sticky and I decorated it with pecans. The second time I made it (as seen in the video) the dough was holding it shape and I decorated it with walnuts.
You can play with the quantity of water from soaked dates to be added into the butter as you wish.


Before you start:

Soak 1 cup of whole, pitted dates, diced

In a bowl add all the flours:
*1 cup white rice flour
*1 amaranth flour
*¼ cup potato starch
*¼ cup tapioca starch
*½ cup brown rice flour
(If you don’t care about gluten then use all purpose wheat flour.)


Then add into the flour bowl the rest of the ingredients:
*½ cup date syrup
*⅓ cup oil
*½ tsp vanilla extract
*1 tsp apple cider vinegar
*1 tsp baking powder
*3 tsp chia seeds, ground
*6 to 8 tbsp water from soaked dates
*Strained dates
Mix everything well.

Preheat your oven to 350F.

Oil and flour your loaf pan or lay parchment paper.
Pour the batter and decorate with pecans or walnuts.
In the oven at 350F for about 20 to 30 minutes.

I love crunchy nuts inside cakes or cookies and with this cake it will go so well, but my boys are not fans of nuts inside desserts. The pecan nuts on top came out crunchy and crispy and for me it was tasty.
