We were planning to visit my in-laws, so I decided to make bake an apple cake for them but this time with 2 layers of apples.
It actually turned out to be amazing and delicious. My sister in law, who is also my biggest supporter, when it comes to Vegan Raw Recipes, was so delighted by the taste and the texture that she labeled it as a Perfect Recipe of Apple Yogurt Cake.
My Mother-in-law, ofcourse loved it too. She said it’s tasty and not overly sweet, just delicious.
Dough mix:
½ cup butter
½ cup coconut vanilla yogurt
1 tsp baking powder
1 tsp vanilla extract
1 cup sugar
Blend with a handy mixer then add:
1½ all purpose flour
And mix again.
Turn on the oven and preheat at 350 while working with apples.
Filling & Top:
In a bowl
3 apples, peel, cut into quarters and slice.
Squeeze 1 large lemon
Mix by hand so it won’t break by spoon.
In a baking pan, layer even half the crust and then place apples on top.
Place the second layer and spread evenly, and again spread the rest of the apples on top.
If you have left over lemon juice in the apple bowl pour all over the top of the cake.
Sprinkle cinnamon on top (optional but recommended)
Bake at 350 for around 30 to 40 minutes or until apples turn brown.
