Ok guys, these are 2 dishes that are great for breakfast or brunch.
We had smoothie and fruits for breakfast, and
40 minutes before my boys swimming lesson, we had this amazing, filling brunch.
My youngest son wanted more, but I didn’t let him because I didn’t want him to swim on a full stomach.
After swimming they’ll have so much appetite, they are going to enjoy these dishes again 😉🤤
In a wide pan or pot fry:
1 large onion, dice
4 King oyster mushrooms, cut in ⅓ and slice
1 pack tempeh, 250g, cut into small squares
Cover with lid and fry until your liking.
Note: I’ll recommend to add a little bit spices, even though there are spices in Tofu Egg.
If you have no tempeh or any interest to cook with, just add more vegetables.
For the vegan egg spread, in a blender:
700g Soft tofu
1 teaspoon black Himalayan salt
¼ teaspoon pepper
1 teaspoon garlic powder or onion powder
1½ teaspoon turmeric
¼ cup nutritional yeast
¼ cup chickpea flour
⅓ cup oil
In a bowl add
2 tomatoes, diced
Tofu egg
Mix and pour on top of fried vegetables
Mix, cover with a lid, lower the heat
And cook for about 30-40 minutes.
While it’s cooking start making the rice.
