Lazy Lasagna for Kids

Easy and simply lasagna that I made for my boys for dinner.
No left-overs left for tomorrow, LOL.
My boys love pasta and one of their favourite dishes is this Quick Lasagna.
My middle son doesn’t eat it when I add vegetables but in this recipe he didn’t complain even once and had a few portions.

Ingredients you’ll need:
Gluten free pasta
Onions
Zucchini
Whole Mushrooms
Garlic
Green olives
Salt
Tomato sauce
Vegan cheese

First step is to soak 1 pack of pasta for 1 to 2 hours in water.

2 onions, cut into ¼ and slice
1 zucchini, cut into ¼ and slice
3 whole mushrooms, cut into ½ and slice
3 garlic cloves, cut into ½ and slice
½ cup green olives, chopped or sliced
½ tsp salt
Fry until soften and a little browned

When ready add
3 cups tomato sauce, and cook for another 10 minutes.
Strain the pasta and start to lay down in layers.

Start to layer on a tray.
I used 9″x13″ (3Qt), 22cmx33cm (3L)

When the mixed vegetables with the sauce is ready pour it on top of the pasta, no need to wait for it to cool down.
First layer Pasta, then mixed vegetables with sauce and cheese.
And another layer, the same as the last one.

My middle son insisted on placing the lasagana into the oven.


My oldest and my middle son usually cook when I’m on a break from the kitchen, they are 12 and 10 years young, and when I need my time off from work I know I can always count on them.
3 of my boys are very responsible when it comes to cleaning and cooking.
