I love salads! As a family, we take our ‘salads intake’ seriously too. This particular salad is inspired by the way my mother in-law cooks it. I am not particularly a big fan of potatoes but this one is definitely an exception. It packs so much of taste and flavour. My boys, in particular, love Potato salad. I was away for a while to fetch something from the kitchen and when I came back the salad was all gone. So happy they loved it!
This Homemade style Potato Salad is easy to make, it’s good for holidays and a perfect serving for your guests.
Ingredients:
8 Potatoes
4 small Pickles
2 Green onions
¼ red onion
2 tbsp parsley
Dressing:
¼ tsp Himalayan salt
Pinch of pepper
3 tbsp Mayo
1 tsp mustard
½ lemon
1 tbsp olive oil
1 tbsp rice vinegar
Directions:
Peel and boil the potatoes in a pan. When it is boiled and has cooled down, chop it into pieces. Add some chopped pickles, green onions and sliced red onions to it. Add some chopped parsley.
Now transfer it to a Salad bowl. Add the above mentioned dressing and mix it all together.
Voilà – ! Its ready
