Veggie Strips (Fingers) With Raw Cashew Dip | Party Or Birthday Tray Recipe

Wow, Delicious & Easy Veggie Fingers When Having Guests Or For Brunch!

I Loved it!
I enjoyed this recipe so much that I got so many ideas to make more different dips & veggie fingers recipes, Yay, I’m excited.

Before you start soak cashews.

Ingredients:
1 cup cashews
1 large garlic clove
Lemon
Dressing
3 carrots
1 cup yellow cabbage
1 cup purple cabbage
2 potatoes
Small bunch of cilantro
1 cup vegan cheese
1 cup Chickpea flour
⅓ cup Potato Starch
Spices

I used my shredding machine, but you can grate on the small size by hand and slice the cabbage very thinly.

Finely shredded
3 carrots, grated
1 cup yellow cabbage, grated thinly
1 cup purple cabbage, grated thinly
2 potato, grated
Small bunch of Cilantro, diced
Add
1 cup cheese
1 cup chickpea flour
⅓ cup potato starch
1 teaspoon salt
1 teaspoon onion powder
¼ teaspoon pepper
2 tbsp nutritional yeast
⅓ cup oil

Note: you can squeeze the vegetables before adding the rest of the ingredients if you wish to do so, but I didn’t do it, and it came out very well, and didn’t break.
Was crispy from outside and soft on the inside.

Mix everything very well and shape into fingers shape & finger size, LoL.

For the cashew dip:
Add into high speed blender-
1 cup cashews, soaked & strained
½ 🍋 lemon, squeezed
½ tsp Salt & pinch of pepper
½ tsp onion powder
1 tbsp Oil
1 tbsp Vinegar
1 large Garlic clove
6 tbsp water

Blend & serve with veggie fingers & vegetables such as:
Carrots
Celery
Cucumber
Cauliflower
Zucchini
Baked stick sweet potatoes
