Vanilla Rose 🌹 Cookies

I have been wanting to make these cookies for a long time but couldn’t find the recipe.
Finally I made them and the cookies turned out so soft, a nice dessert to go with tea or coffee.
I want to bake it again but this time with a different filling.

The ingredients you’ll need:
All purpose flour
Vegan butter
Vegan yogourt, mine was sweet vanilla
Apple cider vinegar
Apple sauce
Ground flaxseed
Baking powder
Vanilla extract
Cane sugar
Tapioca starch
Agave nectar

The first step is to make the dough, place in a bowl:
1 cup vegan butter
1 cup sweet yogourt
1 tbsp vinegar
3 tbsp apple sauce
3 tbsp ground flaxseed
1 tsp baking powder
1 tsp vanilla extract
Mix well with a fork and then add
2.5 cups flour
Mix again and knead very well for a few minutes.
When ready cut into four pieces, set aside and cover with a towel so it won’t dry while making the filling.

For vanilla filling blend all in a blender:
350g tofu
Β½ to ΒΎ cup cane sugar
1 tbsp tapioca starch
2 tbsp agave nectar
Heat it on the pan on low until thicken.

When ready divide into 4 parts, 4 small bowls.
You want to make sure you’re adding enough filling, I did very little and it was my mistake.
And you want to make sure there won’t be any left overs.

Spread flour onto a clean surface and roll out the first part into a rectangle and spread vanilla filling.
Then cut into small rectangles and roll again, now it will look like a small cylinder, then cut again into rounds roses.

Decorate with icing sugar (optional).
