Avocado is a fruit of a plant, and It’s large berry contains a single large seed.
It’s dark green colour in its shell, and light green and smooth texture on the inside.
As vegans, we love to eat lots of avocados, especially when you have 3 growing boys, that want to eat non-stop. It’s full of fat and very nutritious.
So when we buy lots of avocados I enjoy making large quantities of salads with it.
My boys usually enjoy scooping it out and eat it as it is with just a little sprinkled Himalayan salt on top.
This salad is for the whole family, juicy, creamy and full of flavor.
Ingredients you’ll need:
avocado
Lemon
Tomatoes
Red onion
Green onion
Green olives
Mayo
Himalayan salt
Pepper
Olive oil
In large bowl:
7 to 10 Avocados, mash with fork
1 lemon squeezed
7 Diced tomatoes
1 Red onion, diced
¼ – ½ Green onions, diced
¼ – ½ cup Green olives, diced/chopped
6 tbsp vegan Mayo
¼ – ½ cup diced Cilantro
1 tsp Himalayan salt
Pinch of pepper
2 tbsp olive oil
Mix very well and have it as it is or on top of fresh homemade baked bread!
