This salad is absolutely a delight as it can blend very well on top of your bread or you may also have it as a sandwich. The boys in my house loved it as it is.
You have to ensure that the chickpeas are cooked well and and very soft, because if it’s still a little dry, the texture of the salad can be sandy.
I decided to add some vegan cheese into this salad, because my boys love cheese and also I wanted it to be cheesy in flavor & texture.
In a bowl add the next ingredients:
2 cups cooked chickpeas, blended
1 cup corn, blended
Handful spinach, blended
1 cup vegan cheese
1 squeezed lemon
2 tbsp Apple cider vinegar
6 tbsp vegan mayo
½ tsp Himalayan salt
2 tbsp nutritional yeast
¼ tsp turmeric
Mix well and enjoy!
Note: For blending I used my Ninja, I wanted to keep it a little chunky.
You can also use a fork or hand masher.
As for to spinach you can just dice it.
