Delicious Carrot Pecan Chocolate Cake

This soft and sweet cake is easy to prepare with just a few ingredients.

If you don’t mind gluten just use all-purpose flour, and you can decorate with icing sugar on top!

In the blender
1 apple , peeled & chopped +
1\3 cup sugar +
1\3 cups oil +
1\4 cup water +
1 tbsp chia seeds
Blend well

In a bowl
1 cup flour – All purpose flour,
Or 1 cup white rice flour + 1\2 cup tapioca starch
1 tsp baking powder
½ tsp cinnamon
⅓ cup pecans
30g chocolate or 3 – 4 square pieces, chopped
2 medium carrots, grated

Mix all together well, then add on top the blended wet ingredients, mix again well.

Pour the content into a cake pan, I used loaf pan for this cake recipe.

Bake at 350 for about 20 – 30 minutes, or until the tooth stick comes out dry.
