Gallo Pinto (Gluten Free)

I’ve been inspired by the Costa Rican dish called Gallo Pinto.
I really enjoyed eating it when we were on our trip there last year for 5 weeks.

I cooked it in my rice cooker.
2 red onions, diced
1 red bell pepper, diced
1 cup black beans

Fry until browned

Then add 2 1\2 cups rice
2 tbsp apple cider vinegar
Salt and pepper as needed
Mix everything

Then add
3 cups water
Mix and cook on high heat
When boiled lower the heat and add small bunch diced cilantro
Mix and let it cook on lower heat for 10 to 15 min.

It’s best to serve it with plantains.
