Mixed veggies and ground soy with a side of quinoa.

It was so easy and fast to make it, especially when I don’t have any ideas for what to make or I’m  just not in the mood to spend much time in the kitchen.

Mixed Veggies & Ground Soy: 6 to 8 servings

Fry with olive oil
6 onions, chopped
5 garlic cloves, chopped
1 frozen small bag of grated pumpkin
1 frozen small bag chopped red bell peppers
1 frozen small bag grated beets
1 frozen small bag grated carrots
Cover with lid and cook everything on high heat for 15 minutes then add spices:
1 tsp chili flakes
1 tsp paprika
¼ tsp pepper
1 tsp salt
1 tsp garlic powder
1 tsp onion powder
1 tsp red pepper
½ tsp chili
Cook for another 5 minutes.
Enjoy with quinoa.

QUINOA: 2 to 4 servings

½ cup frozen corn
½ cup frozen peas
Fry for 5 minutes then add
1½ cups quinoa
2 cups water
½ tsp salt
⅛ tsp pepper
1 tsp paprika
mix and cover with lid.
Let it boil for a few minutes then lower the heat and let it cook covered for 15 to 30 minutes.
