One Pot Vegan Recipe – Mushroom and Brussels sprouts Rice Medley

We are all at home on a Lockdown and self- quarantined with our family. You can probably make this lockdown phase a little interesting, like I do, by cooking a few more times in the day than usual. Which means more Recipes to experiment! When you are cooking for your family, You have to sometimes cook ‘smarter’ too. I am married and I have 3 boys who are home-schooled. So, I usually get a chance to experiment on a big pot dish which serves the entire family.

Today, I decided to make this incredible and tasty Rice Medley with Mushroom and Brussels sprouts so I don’t need to cook anything else. My Men can have this food for the rest of day and I get some time out too for working on my new recipes 😊

Enjoy this delicious one pot rice recipe with salad or chopped fresh vegetable.

Directions:
In a big pot fry:
4 cups diced red onions
4 cups diced Brussels sprouts
4 cups diced mushrooms

Then add:
1 tsp salt
1 tsp onion powder
1 tsp garlic powder
1 tsp dill
2 tsp parsley
2 tbsp dried chopped onions
¼ tsp pepper

When ready add:
3 cups of basmati rice that have been washed & strained.
5 to 6 cups of water, you want to make sure the rice is covered and then just a little bit more.

On a medium, cook for about 15 minutes, then reduce the heat to low, and cook for about 30 to 40 minutes.

The aroma of the Rice recipe is so incredible and heavenly. You will know when it is ready ! 😊
