The Ultimate Pot of Vegan Tofu (Eggless) Fried Rice

So, I always wanted to make this delicious meal which is also a full stacked meal and eggless variant substituting it with tofu. The flavours of the meal are a combination of something Oriental and Indian making this a unique recipe to try out. This is great if you want to invite family and friends at home and cook this for them.

I call it an ultimate bowl because it is packed with so much flavour and fragrance.

Ingredients:

Medium firm tofu, 700g, diced
1 zucchini, slice into small strips
½ orange bell pepper, slice into strips
½ yellow bell pepper, slice into strips
5 to 6 Brussel sprouts, dice
Handful French beans, diced
1 tbsp Himalayan black salt
¼ tsp pepper
1 tsp onions onion powder
1 tsp garlic powder
3 tbsp nutritional yeast
1 tbsp turmeric
2 tbsp agave nectar
½ cup coconut aminos

Directions:

Fry tofu until the water evaporates. When it is ready add all the ingredients and fry again for 10 to 15 minutes. Now it’s time to add all the spices and mix it well.

Now you can add 2 cups of cooked rice, mix well and cook for another 10 minutes so the rice can absorb the flavour.

Notes:
*If you don’t have coconut aminos, you can use soy instead , but make sure to use less quantity because soy is much more salty then coconut aminos.

*If you don’t want to add the rice, you can serve a fried eggless recipe as a side dish to any cooked grain or seed.
