Pumpkin🎃 Swirl🌀 Cookies🍪 (GF)

I had an idea for pumpkin cookies and I couldn’t wait for the weekend to make it.
So I experimented with the ingredients I had in mind and the results were remarkable.

Because it was my first try, I made a small batch just to make sure it will come out as I want it to.
My mistake, because my man complained that it came out sooooo good and there is only so little of it.

The ingredients you’ll need for this recipe:
Pumpkin puree
Icing sugar
Vanilla extract
Vegan butter
Baking powder
Oat flour
Arrowroot powder

Add into a bowl:
4 cups pumpkin puree, squeezed in cheese cloth
1 cup icing sugar
1 cup oat flour
4 tbsp arrowroot powder
1 tsp baking powder
1 tsp vanilla extract
2 tbsp vegan butter (I used coconut butter)
Mix everything well with a spoon or a fork, until all the chunks are gone.

Place the dough into piping syringe\bag with a large star tip and pipe circles onto a parchment paper-lined baking sheet.


Bake at 350F for about 10 to 15 minutes.
The recipe will yielded 25 cookies, more or less depends on the size you are making.

*It takes time to squeeze the water out with the cheese cloth after boiling the pumpkins, so I recommend to steam and strain it, I haven’t tried it, but I’ll make sure to do it for the next time.

*If you don’t mind the gluten use all purpose flour.
