Scallion Gnocchi Of Dumplings Variation Dough In Tomato & Onion Sauce

Wow, this recipe was one of the best dishes we had, we could just eat & eat & eat it.
It was so addictive that we wanted more the next day.

It took me time to figure out the title for it, I’ve asked so many people what I should name it?!

My mom & my grandmother used to make this amazing dough dish, and I remember us as kids (brother & sister) how we loved it so much that my mom always had to make huge quantity.
And the next day we loved to fry it.

But in my recipe I’m making it in a sauce, something my mom never did, she only boiled it in water, and we had it as it was, with ketchup for dipping or fried tomato paste.

The ingredients you’ll need:
Green onions
Onions
Tomato paste
All purpose flour
Spices

For this recipe you’ll need a wide pot.

In a big bowl:
4 cups diced green onions 
1 teaspoon salt 
1 cup of boiling water let it sit for 5 to 10 minutes so the onions get soft.

Now add 4 cups of all purpose flour and mix with a spoon.
When the water is absorbed start kneading by hand until formed.
Set aside and start with tomato sauce.

Fry until browned
8 onions cut in half and sliced
When browned add
1 teaspoon salt 
¼ teaspoon pepper
Mix and add
2 Can tomato paste
6 cups of water, lower the heat and bring to a boil

Cut the dough in quarters and roll 3 pieces, around 24 inches long.The last piece, I made into crispy flat bread.

Flatten with your hands just a little bit and cut each roll to 2 inches, and place the piece into  the pot when the sauce is bubbling and ready.Make sure you are not placing it on top of the other.

If you don’t want to make flat bread from the 4th piece, then you’ll have to place the dough pieces on top of each other (they may get stuck to each other)

Cover the lid, lower the heat, and cook round 40 to 50 minutes until the dough is ready. I’ll suggest after 40-50 minutes to take out one piece and try it out for yourself just to make sure.

The fourth piece of the dough roll out  to long length and then roll it in, like a 🐌 snail or spiral shape, flatten it with a roller and fry it on both sides for a few minutes.Serve with homemade feta cheese.

If you don’t have a wide pot, then I’ll suggest to make 2 rolls, then take it out, and with the left over of tomato sauce, add the
next 2 rolls of dough, Or half in the pot, and half make big spiral bread.Any way it will come out delicious 😋.
