I had some leftovers of a few vegetables and I wasn’t sure what to do with it and I really didn’t want to throw them away, it’s just a waste of food.
So I decided to create a quick brunch for us.
Fry for about 10 minutes:
3-4 potatoes, grated
½ sweet potato, grated
A few large flores from cauliflower, diced
1 onion, diced
½ tsp salt
½ tsp paprika
¼ tsp pepper
Cover with tofu egg, around 1 cup.
Cover the lid and lower the heat.
Cook for about 30 – 40 minutes!
We had with sauerkraut.
