Pecan Flower COOKIES

I love to bake cookies and it’s fun especially when you decide to make it with your kids.. Today, I made one with Pecan and it tastes and looks incredibly good too. The best part about this homemade recipe is that it is gluten free and will be great to enjoy on holidays with friends and family.

Here is my recipe for Pecan Flower Cookie.

Ingredients:

1\2 cup + 2 tbsp vegan butter
1 tsp vanilla extract
½ cup icing sugar
¼ cup white rice,
¼ cup brown rice,
¼ cup psyllium husk powder
2 tbsp potato starch
2 tbsp tapioca starch
½ cup pecans, ground

Direction:

In a bowl add butter, vanilla and sugar, mix with a handy mixer and then add the rest of the ingredients beside pecans, continue to mix. When ready add ground pecans and mix it all with a spoon.

Scoop and place into a cookie shape mold (optional), or scoop with a spoon and place into a tray.

Decorate with whole pecans.

Bake at 350 for about 15, more or less depend on your oven.
